Raspberry Brownies with Chocolate-Raspberry Cream Cheese Frosting

Raspberry BrowniesThese Raspberry Brownies are not your usual dessert bars. Every bite is a burst of fruity deliciousness from the fresh raspberries made even more decadent by the rich chocolate and raspberry cream cheese frosting.

1/2 cup unsalted butter
1 1/4 cup semi-sweet chocolate chips
2 eggs
3/4 cups light brown sugar
1 teaspoon instant coffee granules
2 tablespoons water
1 teaspoon vanilla extract
1/2 teaspoon baking powder
3/4 cups all-purpose flour
1 cup fresh raspberries

8 ounces cream cheese, softened
3/4 cups powdered sugar

1/4 cup semi-sweet chocolate chips
1 teaspoon vegetable shortening


Preheat the oven to 350 degrees. Grease an 8×8-inch baking pan and set aside.

Place the butter and chocolate chips in a heavy sauce pan and heat over low heat until melted. Cool slightly.

In a small bowl, whisk together the flour and baking powder. Set aside.

Cream the eggs and brown sugar using an electric mixer. Add vanilla extract and set aside.

Dissolve the coffee crystals in hot water and add into melted chocolate mixture. Slowly add the chocolate mixture into the eggs and sugar while mixing on low speed.

Continue beating on low speed while adding the flour. Mix until just combined. Gently fold in the raspberries with a spatula.

Pour batter into prepared baking dish and bake for 30-35 minutes or until toothpick inserted into center comes out clean. Cool completely before frosting.

To make the frosting, melt the 1 cup chocolate chips and let cool slightly. Puree raspberries using a food processor until smooth, them push through a fine mesh strainer to remove the seeds. Set pureed berries aside.

In a mixing bowl, beat the cream cheese until fluffy, with mixer on low add the powdered sugar, melted chocolate, and pureed raspberries. Mix until well combined. Spread the filling evenly over the cooled brownies. Refrigerate for a couple hours before slicing and serving.

For the drizzle, melt the chocolate chips and shortening. Stir well to combine. Drizzle glaze evenly over cooled brownies. Garnish with fresh raspberries.

Refrigerate leftover Raspberry Brownies in an air-tight container.
