2 stick unsalted butter
2 tbsp. unsalted butter
9 oz. good-quality dark chocolate
6 large eggs
11 tbsp. superfine sugar
2 oz. almonds
confectioners sugar for sprinkling (optional)
Preheat oven to 350 degrees F. Slightly grease a 10-inch springform cake pan with butter and set aside.
Melt butter and chocolate in the upper pot of double boiler over gently simmering water. Stir until combined and smooth. Set aside to cool.
In a medium bowl, whisk together egg yolks and sugar until pale and fluffy. Gradually pour melted chocolate into egg mixture, stirring constantly. Fold in almonds. Set aside.
In a large bowl, beat egg whites using an electric mixer on medium-high speed until stiff peaks form. Fold egg whites into chocolate mixture until just combined. Pour mixture into prepared pan and bake for 35 minutes. Expect torte to be very moist in middle.
Remove from oven and place pan in a wire rack to cool completely, about 1 hour. Transfer torte into a serving platter and sprinkle with confectioners sugar if desired.
