Easy Peasy Cherry Bars

Cherry BarsThis is a very simple but elegant dessert. Popular during Christmas Holidays, these delicious treats are easy enough to make on a regular day and worthy to be enjoyed any time of the year. Here is an easy dessert recipe for Cherry Bars.

1 c. (2 sticks) butter, softened
2 c. sugar
4 eggs
3 c. flour
1/2 tsp. almond extract
1 tsp. vanilla
1 lg. can (21 oz.) cherry pie filling


Cream butter and sugar together until very light and fluffy.

Beat in eggs one at a time. Add the almond extract.

Gradually mix in the flour until well incorporated.

Spread 3/4 of the batter in the bottom of a 9"x13" baking pan lined with parchment paper.

Spoon cherry pie filling evenly over batter in pan.

Drop remaining batter by spoonfuls over the cherry pie filling.

Bake at 375 for 45 min. Cool completely in a wire rack. Slice into squares before serving. Leftovers can be stored in an air-tight container and refrigerated for a couple of days or frozen for up to three months.
