Caramel Apple Bars

1 1/4 cups all-purpose flour
1/4 cup plus 1/2 cup firmly packed brown sugar
1/2 cup (1 stick) butter or margarine
2 large eggs, beaten
1 teaspoon vanilla extract
2 Golden Delicious apples, cored and chopped
1 cup caramel candies, each cut in quarters
1/2 cup chopped walnuts or pecans

Heat oven to 350°F (175°C). Lightly grease a 9-inch square baking pan.

Combine 1 cup flour and 1/4 cup brown sugar in a mixing bowl. Cut in butter until mixture resembles coarse crumbs. Transfer mixture to pan and press in an even layer in bottom of prepared pan. Bake for 10 minutes.

In a mixing bowl, combine eggs, vanilla, 1/2 cup brown sugar, and remaining 1/4 cup flour; stir in apples, caramels, and nuts. Pour over crust.

Return to oven and bake for another 30 to 35 minutes or until golden. Cool slightly before cutting into quarters to make 16 bars. Cool completely. Store in an air-tight container.
