Quick and Easy Blueberry Muffins

Blueberry MuffinsVery quick and easy to prepare, this Blueberry Muffins recipe is perfect as breakfast fare,  lunchbox treat and even dessert! Here is an easy dessert recipe for Blueberry Muffins.

1 egg
120ml milk
4 tablespoons vegetable oil
200g plain flour (plus a teaspoon for coating the berries)
100g caster sugar
2 teaspoons baking powder
1/2 teaspoon salt
100g frozen blueberries (or any frozen berries)


Preheat the oven to 200 degrees Celsius. Place paper muffin cups in a muffin tray.

Beat the egg in a large mixing bowl with a fork. Stir in the milk and oil.

In a separate bowl, sift together flour, sugar, baking powder and salt.

Add the flour mix to the egg mix and stir until combined but do not over-mix. Batter should be a bit lumpy.

Place the frozen berries in a small bowl and sprinkle over a teaspoon of flour to coat.

Gently stir coated berries into muffin mixture.

Spoon batter into muffin cups until 3/4 full. Bake in the oven for 20-25 minutes until golden brown or cake tester comes out clean.
