4 large eggs
1 cup granulated sugar
3/4 cup butter
1 cup blackberry preserves
1 cup buttermilk
1 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon each ground cinnamon, allspice and nutmeg
Pinch salt

Cream Cheese Frosting
1 (8-ounce) package cream cheese
1 (1-pound) package confectioner's sugar
1/2 cup (1 stick) butter
1 tablespoon cream
1 teaspoon vanilla extract
fresh blackberries for garnish (optional)

Pre-heat oven at 375°F (190°C).

To make the cake, mix soda and buttermilk together.

Cream sugar and butter. Add beaten eggs and preserves and mix until combined. Add flour and spices.

Pour batter in three 9-inch cake pans and bake for 30-35 minutes or until fork or wooden pick comes out clean. Cool in pan over a wire rack.

Meanwhile, prepare the cream cheese frosting. Combine cream cheese and butter. Add vanilla, sugar and cream; mix well.

Remove cooled cakes from pans and assemble one on top of the other, applying frosting between layers. Cover entire cake with more cream cheese frosting.
