Sweet Blueberry Rolls with Lemon Glaze

Sweet Blueberry RollsThese Sweet Blueberry Rolls are fluffy, soft, and bursting with fresh blueberry juices in every bite! The easy to make lemon glaze makes them extra special. Here is an easy dessert recipe for Sweet Blueberry Rolls.

2-3/4 cup all-purpose flour
3 tablespoons granulated sugar
1 teaspoon salt
2-1/4 teaspoons instant yeast
1/2 cup water
1/4 cup milk
2-1/2 tablespoons unsalted butter
1 large egg

1-1/3 cup frozen blueberries
1/4 cup granulated sugar
1 teaspoon cornstarch

Lemon Glaze
juice from 1 large lemon
1 cup powdered sugar (or more)
1-2 Tablespoons half-and-half or heavy cream


Prepare the filling first: combine the frozen blueberries, sugar, and cornstarch in a bowl. Gently toss around and set aside.

To make the dough, set aside 1/2 cup of flour. Combine the rest of the flour with sugar, salt, and yeast in a large bowl. Set aside.

Place the water, milk, and butter in a microwave safe bowl and heat until the butter is melted and the mixture is warm to touch. Add the butter mixture into the flour mixture and stir  until combined. Add the egg. Add only enough of the reserved flour if dough is too wet or as much as need to make a soft dough. The dough should not be too sticky and should pull away from the side of the bowl and has an elastic consistency.

Place the dough on a lightly floured surface and knead for about 5-6 minutes. Put it in a lightly greased bowl and let rest for about 10 minutes.

After resting, roll the dough into a 14x8 inch rectangle. Pour the sugared blueberries on top and gently spread them to cover the dough surface. Roll up the dough tightly. Slice the roll into 11 even pieces and place side by side in a lightly greased 9-inch round pan or pie dish.

Loosely cover the rolls with aluminum foil and allow to rise in a warm, draft-free place for 2-3 hours or until the rolls have doubled in size.

Bake in a pre-heated 375F oven for 25-30 minutes or until lightly browned. To prevent heavy browning, cover the rolls with aluminum foil after the first 15 minutes of baking.

Meanwhile, make the glaze by mixing the lemon juice, powdered sugar and cream. Depending on the consistency you prefer add more powdered sugar to make a thick glaze or use more lemon juice or cream for a thinner sauce. A pinch of sugar can help cut the sweetness.

Pour lemon glaze over Sweet Blueberry Rolls and let sit for 15 minutes before serving.
