1½ cups all-purpose flour
½ cup butter
½ cup sugar
½ cup brown sugar
½ cup chocolate chips
1/3 cup cocoa powder (unsweetened)
1 tsp. baking soda
1 tsp. red food coloring
1 tsp. vanilla
¼ tsp salt
Preheat oven to 375° F (190º C). Lightly grease a sheet pan with cooking spray.
Using a hand blender, mix together the butter, brown and white sugars until a fluffy and creamy concoction is formed.
Add in the egg and the vanilla extract. Keep blending until you have a uniform and smooth mixture. Add the food coloring and blend again.
Add the flour, cocoa powder, baking soda, salt and whisk the mixture to obtain a rather thick batter. Fold in the chocolate chips gradually while whisking it. Refrigerate the batter for an hour.
Use an ice cream scoop to make balls from the cookie dough and then flatten each one using your palms. Place them on the sheet pan, maintaining a 1-inch distance between cookies. Bake for 13 minutes.
