Raisin Macaroon Bars

Raisin Macaroon BarsSoft and chewy bars with crisp outer shell. Very easy to make using only four ingredients that are readily available from your pantry.  Here is an easy dessert recipe for Raisin Macaroon Bars.

3/4 cup condensed milk
2 cups coconut (desiccated or fresh grated)
4 tbsp melted butter
3 tbsp raisins (or dried black currants)

Combine all four ingredients in a bowl and mix until well-incorporated. Scrape the mixture into a greased baking pan and bake at 165C for 1 hour.

Increase the temperature to 185C and bake for another 10 minutes to form a crisp top. Remove from oven and cut into bars. Leave to cool in pan. Once cool down, run a knifeover the bars or break into pieces.
