This is a popular Southern dessert consisting of fresh peaches topped with pastry before baking. It's pretty much like a pie without a bottom crust. Here's a very simple and easy recipe for Peach Cobbler.
4 cups sliced peaches
2 tbsp lemon juice
1/2 cup whole wheat flour
1/3 cup brown sugar
1 tsp cinnamon
2 tbsp margarine
Preheat the oven to 375F.
Place the sliced peaches in a shallow casserole dish and sprinkle with lemon juice.
In a bowl, combine the flour, sugar and cinnamon. Cut in the margarine with a pastry blender or a fork until the mixture is crumbly. Spread mixture over peaches.
Bake for about 30 minutes.
Serve warm with a scoop of vanilla ice cream.
