This easy dessert recipe for Oatmeal Coconut Cookies is perfect for summer! The unique flavor of the coconut flakes will transport you to a tropical island. Very simple and quick to prepare (you only need less than half an hour!), these chewy and crunchy treats will quickly disappear from the cookie jar so make a large batch!
1 1/2 cups brown sugar
1 cup white sugar
3/4 cup butter, softened
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup oats
1 cup crispy rice cereal
1 cup flaked coconut
Preheat oven to 350 degrees F and lightly grease a cookie sheet.
In a large bowl, beat together brown sugar, white sugar and butter using an electric mixer until smooth. Add the eggs, one at a time, beating thoroughly until well-incorporated before adding the next. Add the vanilla extract.
In another bowl, sift together flour, baking soda, salt, and baking powder. Tranfer to the egg and butter mixture and mix until just incorporated into a dough. Add the oats, crispy rice cereal, and coconut into the dough and mix just enough to evenly combine.
Drop teaspoonfuls of cookie dough onto prepared baking sheet.
Bake for 8 to 9 minutes or until golden brown. Cool cookies slightly on baking sheets before moving to cooling racks to cool completely.
