Mud Hen Bars are cookie bars made with chocolate chips, marshmallows and nuts, then topped with crisp and gooey brown sugar meringue. A mud hen is a marsh fowl with short wings and long legs and it still beats me why a delicious treat like these are named after these swamp-dwelling birds.
Anyways, these treats are guaranteed crowd pleasers as how could you go wrong with chocolate chips, marshmallows and meringue? They are also very easy to make, even kids will enjoy dumping the layers into a baking pan! Here is an easy dessert recipe for Mud hen Bars.
1/2 cup Butter, room temperature, plus extra for greasing
1/2 cup sugar
1/2 cup brown sugar
1 whole egg
2 whole egg yolks
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups all-purpose flour
3/4 cup chocolate chips
1 cup mini marshmallows
1 cup almonds Or any desired nut, chopped
2 whole egg Whites
1 cup light brown sugar
Preheat oven to 350 degrees. Grease a 9x13 baking pan with cooking spay, line with parchment paper then butter parchment paper. Set aside.
Cream together butter, sugar and brown sugar. Add the whole egg, two egg yolks, vanilla, baking powder and salt. Combine until mixture is smooth and creamy.
Add flour and mix until combined scraping the sides of bowl as needed.
Transfer dough over the prepared baking pan and smoothen with spatula to make an even layer.
Sprinkle chocolate chips, marshmallows and nuts evenly on top of dough. Press slightly.
Make the meringue by beating egg whites until stiff peaks form. Gently fold in the brown sugar, taking care not to deflate the egg whites. Spread mixture evenly over the top of chocolate chips, marshmallows and nuts.
Bake for 30 minutes or until golden brown. Allow bars to cool completely before cutting to desired size.
Store leftover Mud Hen Bars in an air-tight container.
