1 (9-inch) baked pastry pie crust [RECIPE]
2 tablespoons all-purpose flour
1 tablespoon butter
2 large egg yolks
1 cup pure maple syrup
1/2 cup water
2 large egg whites
2 tablespoons granulated sugar
Lightly prick the bottom and sides of the pie dough using the thines of a fork. Bake the crust in an oven preheated to 425º F for about 8 minutes; set aside.
Combine flour and butter in the top of a double boiler and beat using an electric mixer on medium speed until creamy. Add egg yolks and beat well before adding maple syrup and water.
Place the top of the double boiler over the bottom half and cook the mixture until thick, stirring occasionally. Pour mixture into baked pie crust. Set aside to cool.
Meanwhile prepare the meringue. Beat egg whites and sugar until stiff peaks form. Spread evenly on top of filling. Return to oven and broil for 3 to 4 minutes, or until meringue turns slightly golden.
