1 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter
1/3 cup packed brown sugar
1/3 cup granulated sugar
1/4 cup raspberry jam
1 large egg
1 cup white chocolate chips
1 cup chopped macadamia nuts
Preheat oven to 350°F (175°C). Lightly grease a baking sheet.
In small bowl sift together flour, baking soda and salt. Set aside
In a large mixing bowl, cream butter and sugars until light and fluffy. Add egg and beat well. Add the vanilla and raspberry jam, mixing well.
Stir in the flour mixture until just mixed. Fold in nuts and white chocolate chips.
Drop batter by tablespoonfuls onto prepared baking sheets, about 2-inches apart.
Bake for 8 to 10 minutes or until top of cookies are slightly brown. Do not over bake.
Transfer cookies to wire racks to cool completely. Store in airtight container.
