Here is an easy dessert recipe for Lemon Cupcakes with Cream Cheese Frosting.
4oz caster sugar
4oz self raising flour
Zest of 1 lemon, finely grated
Lemon Cream Cheese Frosting
1 (8-oz.) pkg. cream cheese, softened
1/4 c. butter, softened
2 T. lemon juice
1 tsp. vanilla extract
5 c. confectioners sugar
Preheat oven to 190 degrees Celsius. Line a cupcake pan with paper cups.
Using an electric mixer, beat the butter and sugar together until smooth and creamy (about 2 minutes). Add in the eggs one at a time and continue mixing.
Add in the flour and lemon zest to the mixture and mix until well-incorporated. Spare some of the lemon zest for garnish.
Spoon batter into cupcake pan, about half full, Bake in the oven for 15-20 minutes until well risen and golden brown or a cake tester comes out clean. Place on a wire rack to cool.
While waiting for the cupcakes to cool, prepare the cream cheese frosting. Beat cream cheese, butter, lemon juice, and vanilla together until smooth and light. Add confectioners sugar slowly. Beat until creamy. Add more powder sugar or juice as needed for desired consistency.
Spread frosting on top of cooled cupcakes. Sprinkle with finely grated lemon zest on top for garnish.
