1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup butter or margarine, cut up
3/4 cup honey
2 large eggs
2 tablespoons all-purpose flour
3 tablespoons fresh lemon juice
1 teaspoon freshly grated lemon peel
1/2 teaspoon baking powder
1/4 teaspoon salt
powdered sugar for dusting optional)
Preheat oven at 350°F (175°C). Lightly grease an 8 x 8-inch baking pan; set aside.
To make crust, combine flour and powdered sugar in small bowl; mix well. Cut in butter until mixture resembles coarse crumbs. Press mixture into prepared baking pan.
Bake for 12 to 15 minutes or until lightly browned; remove from oven.
For the filling, whisk together honey and eggs in large bowl. Add remaining ingredients; whisk until well blended. Pour over baked crust.
Bake at 350°F (175°C) 25 to 30 minutes or until filling is set. Cool completely on wire rack. Cut into bars. Sprinkle with powdered sugar if desired.
