Ganache-Filled Cookies

Ganache-Filled CookiesDelectable cookies with gooey chocolate filling! They may look ordinary but once you take a bite, you'll get hooked with their chocolatey surprise in the center! These Ganache-Filled Cookies may not be the fastest goodies to bake (dough and filling need to be refrigerated overnight) but they are worth it! Here is an easy dessert recipe for Ganache-Filled Cookies.

Ingredients:

Ganache
2/3 cup chocolate chips, (milk, bitter-sweet or even white chocolate if desired)
1/3 cup heavy cream
2 teaspoon sugar
2 teaspoon butter
1 teaspoon vanilla extract

Cookie Dough
1 1/4 cups butter, softened
2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt

Procedures

Ganache
Combine cream and sugar in a sauce pan and bring to a light boil under low fire. Add butter, vanilla, and chocolate chips. Stir constantly until all chocolate is melted and mixture is completely smooth. Be careful not to burn it. Place ganache in a container and leave to cool before covering and placing inside refrigerator to chill overnight.

Cookie Dough
Place butter and sugar in a large bowl and cream until light and fluffy using an electric mixer. Add eggs and vanilla; beat well.

In another bowl, combine 2 cups flour, cocoa, baking soda and salt; Add by spoonfuls into creamed butter mixture, mixing thoroughly after each addition. After all the flour was incorporated, the dough should become a smooth ball. Cover the dough with kitchen wrap and allow to chill overnight.

To assemble the cookies, form the chilled ganache into 1/2-inch balls of chocolate. Then, create 1-inch balls from the cookie dough. Place dough balls onto a flat surface and flatten with the back of a spoon to form 1/4 thick discs. Place a ganache ball in the center of the flattened cookie dough, and wrap it up so the ganache is surrounded in dough.

Place dough balls 2 inches apart on a baking sheet lined with parchment paper. Bake at 375 for 10 minutes. Allow to cool in the pan at least 10 minutes before transferring into a rack to cool completely.

Ganache-Filled Cookies with a glass of milk, coffee or tea. Store leftovers in an air-tight container.
