Danish Butter Cookies remind me of my childhood days. Grandma always have a tin of these delicious treats when we visit. They are very easy and quick to prepare so I always make my cookie jars are always filled with these goodies. Here is an easy dessert recipe for Danish Butter Cookies.
3/4 cup butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon lemon juice
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
Pre-heat oven to 350°F (175°C).
In a large mixing bowl, beat together butter and sugar using an electric mixer on medium speed for 3 to 4 minutes, or until well mixed.
Add eggs, one at a time, beating after every addition. Add lemon juice and vanilla; mix well. Add flour; mix well.
Place mixture in a pastry bag with a star tip and pipe into circles onto an ungreased cookie sheet.
Bake for 12 to 15 minutes or until light brown. Leave to cool in wire rack before storing in air-tight containers. Makes 3 1/2 dozen cookies.
