Chocolate-Dipped Shortbread Bars

Chocolate-Dipped Shortbread BarsHere's another chocolate-y dessert recipe that is so delicious but very easy to make. These shortbread bars are made more decadent by adding mini chocolate chips into the dough and then dipping each bar into melted chocolate. Here is an easy dessert recipe for Chocolate-Dipped Shortbread Bars.

1/2 pound (2 sticks) unsalted butter, softened $
1/3 cup granulated sugar
1/3 (packed) cup brown sugar
Pinch of salt
1/2 teaspoon vanilla extract
2 cups flour
3/4 cups mini chocolate chips
2 cups mini chocolate chips (melted)


Preheat oven to 325°F.

Beat butter, sugars and salt using medium speed of an electric beater, about 1 minute. Add the vanilla and beat until incorporated. Reduce speed and add flour in thirds, beating just until blended after each addition. Fold in 3/4 cup chocolate chips.

Transfer dough into an ungreased 13" x 9" baking pan. Press dough evenly on bottom of pan with your fingers. Bake until golden brown, about 35 minutes. Let cool for 5 minutes.

While still warm in the pan, cut shortbread into rectangular bars. Cool completely in the pan.

Melt 2 cups mini chocolate chips over a double boiler or in a microwave. Mix until smooth and free from lumps. Dip half of each shortbread bar into melted chocolate and place on baking sheet lined with wax paper. Let stand until chocolate is set.

Store leftover Chocolate-Dipped Shortbread Bars in an air-tight container. They will remain fresh for up to 4 days at room temperature, longer when refrigerated.
