1/4 cup butter
3/4 cup honey
1 large egg
1/3 cup milk
1/2 teaspoon vanilla extract
1 cup all-purpose flour
3 tablespoons unsweetened cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup melted semi-sweet chocolate chips
1/4 cup honey
Preheat oven to 350°F (175°C). Line muffin pan with paper cupcake liners.
Cream butter with an electric mixer until light and fluffy; gradually add honey, beating until light and creamy. Beat in egg, vanilla and milk.
Into a separate bowl, sift together flour, cocoa, baking soda and salt; gradually add to butter mixture, mixing until well blended.
Spoon batter into prepared muffin pan, filling each cup 3/4 full.
Bake for 20 to 25 minutes or until wooden pick inserted in center comes out clean. Remove from oven and place on a wire rack and leave to cool in pan for 5 minutes. Remove from pan to wire rack to cool completely.
Meanwhile, prepare the frosting by combining the melted chocolate chips and honey. Mix until smooth and spread on top of each cooled cupcake.
