1/2 cup vegetable shortening
1 cup firmly packed brown sugar
1 large egg
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sweetened coconut flakes
1/2 cup nuts of your choice (chopped)
1/2 cup candied cherries (chopped)
Preheat oven to 350°F (175°C). Lightly grease a cookie sheet with cooking spray.
Cream together shortening and brown sugar in a large bowl. Add in egg and vanilla and beat until well incorporated.
Sift together flour, baking soda and salt. Gradually add flour mixture into creamed mixture; beat until blended. Stir in coconut, nuts, candied red cherries; mix well.
Drop mixture by rounded teaspoon onto greased cookie sheets. Bake for 15 minutes; cool on cookie sheet for 1 minute and transfer to wire rack to cool completely. Store Cherry Coconut Drop Cookies in air-tight containers.
