Caramel Swirl Cheesecake

Caramel Swirl CheesecakeA rich cheesecake with swirls of caramel made even more decadent with thick caramel sauce upon serving. Definitely a sure-fire hit with family and friends. While it looks complicatedly divine, this cheesecake is very easy to make but requires some time to set. Here is an easy dessert recipe for Caramel Swirl Cheesecake.

250g Graham crackers
125g butter, melted

Creamcheese Filling
500g cream cheese, softened
1/2 cup firmly packed brown sugar
1 teaspoon vanilla extract
2 eggs
3/4 cup thickened cream
2 tablespoons plain flour

Caramel Swirl
8 caramel chews
2 tablespoons thickened cream

Caramel sauce
1 cup firmly packed brown sugar
300mls thickened cream
60g butter, chopped

Preheat oven to 160°C. Grease and line a 6cm-deep, 19cm square cake pan with baking paper with overhang on two sides.

Pulse Graham crackers in a processor until fine crumbs form. Add butter and continue processing until well-combined. Press mixture into the bottom of prepared pan and refrigerate for 30 minutes.

In a small saucepan, heat caramel chews and cream on medium-low. Constantly stir while cooking until chews are completely melted and mixture is free from lumps, about 2 to 3 minutes. Remove from heat and set aside.

Beat cream cheese, sugar and vanilla using an electric mixer until smooth. Add eggs, 1 at a time, beating after each addition. Beat in cream and flour until just combined.

Pour mixture into prepared pan and spread evenly. Drop dollops of melted caramel over creamcheese mixture. Run a knife or a wooden skewer over the caramel to form swirls. Bake for 50 minutes or until centre is almost set. Turn the oven off but leave the cheesecake inside with the door slightly ajar.

After 3 hours, remove cheesecake from oven and refrigerate overnight.

To make the caramel sauce, Cook sugar, cream and butter in a saucepan over medium heat. Stir constantly for 4 to 5 minutes or until boiling. Reduce heat to low and simmer for another 2 minutes to thicken. Cool slightly for 10 to 15 before serving.

Remove cheesecake from pan by gently pulling the baking paper tabs on two sides. Place on a flat surface and cut cheesecake into squares. Serve with caramel sauce.
