1 cup all-purpose flour
3/4 cup granulated sugar
1/4 cup unsweetened cocoa
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla extract
1 cup sweetened flaked coconut
1 cup hot water
1/2 cup chocolate syrup
Preheat oven to 350°F (175°C). Lightly grease an 8-inch square baking dish.
In a medium bowl, mix together flour, sugar, cocoa, baking powder and salt. Add milk, butter and vanilla; mix well until smooth. Add in coconut flakes and spread batter into prepared baking dish.
In another bowl, combine hot water and chocolate syrup until smooth. Pour evenly over batter.
Bake for 32 to 38 minutes or until center is set and edges pull away from sides of pan. Serve warm with a scoop of vanilla ice cream or whipped cream. Makes 9 servings.
