1 (9-inch) unbaked pie crust
4 cups blueberries, fresh or frozen
1 cup granulated sugar
1/4 cup lemon juice
1/3 cup cornstarch
1/4 cup water
Preheat oven to 400°F (205°C).
Mix together blueberries, sugar and lemon juice in a heavy saucepan. Bring to a boil over medium heat, stirring frequently.
Mix cornstarch with water to make a paste. Pour into berry mixture, stirring constantly until thick. Remove from heat and let cool.
Pour blueberry filling into unbaked pie shell. Bake for about 35 minutes or until the crust is golden.
Serve with a dollop of whipped cream or your favorite ice cream.
